Raw Jersey cow milk. Aged 3 months in a 12 lb wheel. Like a Morbier, this creamy, semi-firm cheese has a line of ash in the center. Wonderful earthy aroma and great with microbrews.
I bought this for my own curated 50th birthday party. Of all the international and local cheeses, I found it to be one of my all-time favorites and my guests agreed. It was the first to disappear! It is a divine cheese and the local production makes it absolutely fresh so it can be served and cut at its peak. Highly recommend!
