Amazing Spanish style sheep milk cheese with a lovely dry texture indicating that it has been aged long enough for my tastes. Matured long enough that all grassy and earthy tones are nicely mellowed. The flavor is very well rounded with a sweet nutty note that contrasts nicely with the peppercorns. The buttery flavor lingers on the palate after you’re done. Pairs well with a robust honey like poplar or buckwheat.
Oh my goodness!!! I went to a Bed and Breakfast and they were serving this cheese at the afternoon wine tasting. I came home and couldn’t forget the taste of this amazing cheese. I called the Bed and Breakfast and they told me they got it in New York. My daughter and I spent the day at the Reading Terminal Market and I visited every cheese stand and low and behold I found the cheese!!!! I was so happy, I will be ordering this as a special surprise for next time I visit my sister because we went together on the beach trip and she just loved it, it’s now our favorite.
